"Appetite for Change is a local grassroots non-profit," says Princess Titus, co-founder of AFC, inc. and one of the contributors to the new book Appetite for Change: Soulful Recipes from a North Minneapolis Kitchen. "Our mission and vision is to use food as a tool to create health, wealth and social change."
Starting in 2012, AFC grew from conversation into an urban farm program, a local restaurant, and now a cookbook. The 2024 publication includes highlights of the non-profit's creation, stories about the community and individuals that helped it grow, and a wealth of healthy recipes that can be created with locally grown produce.
The creation of AFC included a lot of community input, particularly from young voices. "It was about 80 young people that showed up one day to an event," says Titus. "Those young people were looking for a place... a space at the table... Our young people are worth listening to."
Appetite for Change is available online and at various bookstores.
