Derek Nicholas is one of three contestants on season two of The Great Minnesota Recipe on PBS North. The draw for Nicholas to apply was to spread the word about using local ingredients. "I just kind of look at the food that grows all around us," says Nicholas who is a member of the Red Cliff Band of Ojibwe. "Elders drop me off things... I just try to cook something up and gift it back to them."
When it comes to new ingredients that he's interested in working with, Nicholas didn't hesitate with an answer. "Moose nose," says the cook. "It's a whole process of cleaning it out."
