MN Reads: "Savory Sweet: Simple Preserves from a Northern Kitchen" (encore)

University of Minnesota Press and Mette Nielsen

What do you do with another pile of beets from your CSA?

This episode of MN Reads was originally aired June 28, 2018. If you are growing more tomatoes in your garden than you can cook into sauce or simply looking for some bright flavors to brighten up your summer barbecue, The cookbook "Savory Sweet" offers up solutions. A cookbook dream team of Minnesota food writer, chef and author Beth Dooley and Mette Nielsen, Danish born cookbook photographer, have produced a handy reference book full of ideas to bring out the most flavor and shelf life of your fresh produce this season.

This cookbook will up your game on refrigerator pickles; making preserved limes, pickling carrots and mushrooms or making your own savory, sweet marmalade or mustard. Co-author Beth Dooley joins us to talk about enjoying preserves throughout our short northern growing season without the trouble of canning.
