Depending on where you are in the world, a change in the season can mean a completely different list of options on a restaurant menu. Such is the case for Northern Waters Smokehaus and the new cookbook compiled by employees that utilizes those seasonal changes to frame the recipes within. Smoke on the Waterfront provides culinary details, plenty of character, and a lot of options. Although many trek to Northern Waters Smokehaus for their fish selection, the cookbook's offerings venture into various different cuisines, including a few dessert items.
With three primary authors (Ned Netzel, Nic Peloquin and Mary Tennis) as well as two contributing writers, there were efforts taken to create a consistent tone. "We got together on a weekly basis," say Peloquin. "I think it kind of happened naturally that it arose as one voice."
"There is sort of a tone and a cadence of communication at the Smokehaus," says Netzel. "We learn to talk about products a certain way, we have our own in-jokes in the kitchen... we wanted that to come across in the book."
Smoke on the Waterfront can be purchased at the book release event tonight from 6-9pm at the Northern Waters Smokehaus space in the Dewitt Seitz building in Canal Park. The book will also be available at various booksellers and online.
